Apple sauce is good for pork, duck and goose, to cut the richness.
1 lb (450 g) cooking (tart) apples
5 tablespoons water
juice of 1/2 lemon
2 tbsp (1 oz) 25 g butter
sugar to taste
1. Peel, core and slice the apples. Place in a pan with water and lemon juice, cover and cook gently until soft.
2. Beat well with a wooden spoon or puree in a blender or food processor until smooth.
3. Add the butter and sugar to taste.
