Spiced Aubergines

ingredients

serves 4
3 tbsp (60 ml) corn oil
1 1/2 lb (700 g) aubergines (egg plant), cubed
2 onions, skinned and chopped
1 garlic clove, skinned and crushed
2.5 ml (1/2 tsp) ground coriander
2.5 ml (1/2 tsp) ground cumin
400 g (14 oz) can chopped tomatoes
1 tbsp (15 ml) chopped fresh coriander or parsley, to garnish

method

1. Heat the oil in a large saucepan and cook the aubergines and onions for 5 minutes, stirring occasionally.

2. Add the garlic and spices and cook, stirring, for 2 minutes.

3. Add the tomatoes to the pan with their juice and bring to the boil, stirring.

4. Cover and simmer for 20-30 minutes, until the aubergines are tender.

5. Serve hot with chopped coriander or parsley sprinkled over.
