Granary Torpedo Rolls

ingredients

serves 4
150 g (5 oz) Caerphilly cheese (mozzarella or Scmorzel cheese), crumbled
1/2 red pepper, cored, seeded and finely chopped
1 - 2 carrots, scrubbed and grated
1 tbsp (15 ml) mayonnaise
pepper, to taste
4 long granary rolls or 2 French granary loaves
a little cress, to garnish

method

1. Mix together the cheese, red pepper, carrots, mayonnaise and seasoning.

2. Just before serving, split the rolls lengthways and divide the filling between the rolls.

3. Sprinkle the cress on top and serve.
