1. Pierce each potato with a metal skewer.
2. Place on a baking sheet and cook at 220°C (425°F) mark 7 for 45-50 minutes, until soft and cooked through.
3. Meanwhile, stir the cheese into the hummus and season, if liked.
4. Cut a cross in the top of each potato and spoon in the hummus mixture.
5. Serve at once with a crunchy salad.
