Piquant Turkey Drumsticks

ingredients

makes 4
2 tbsp (30 ml) tomato puree (paste)
2 tbsp (30 ml) Worcestershire sauce
1 tbsp (15 ml) red wine vinegar
2 tbsp (30 ml) sunflower oil
1 garlic clove, skinned and crushed
few drops Tabasco sauce (optional)
4 turkey drumsticks, weighing about
1 1/2 kg (3 lb), skinned and scored
Watercress (salad cress), to garnish

method

1. Mix together the tomato puree, Worcestershire sauce, vinegar, oil, garlic and Tabasco.

2. Rub well into the drumsticks, particularly where the flesh is scored.

3. Place on a wire rack set in a small roasting pan and cook with any remaining liquid at 190°C (375°F) mark 5 for about 1 hour.

4. Baste with the liquid and turn occasionally, until the drumsticks begin to brown and the flesh shrinks away from the bones.

5. Garnish with watercress and serve at once
