method
1. Put the honey and grapefruit rind and juice into a saucepan and heat gently.
2. Stir in the rum and keep warm over a low heat.
3. Whip the cream until thick peaks form, then whisk in the yogurt and the honey and grapefruit mixture.
4. Put a grapefruit segment into the bottom of each of 4 stemmed glasses and top with the warm posset.
5. Decorate with the remaining grapefruit segments and serve.
