Special Curried Chicken

ingredients

serves 4
3 medium onions, skinned and sliced
2 tbsp (25 g) 1 oz butter
1 level tbsp (15 ml) curry powder
1 lb (450 g) cauliflower florets
8 oz (225 g) carrots, peeled and sliced
1 medium green pepper, seeded and chopped
2 sticks of celery, cleaned and chopped
1 lb (450 g) cooked chicken, chopped
2/3 cup (150 ml) 1/4 pt milk
30 ml (2 level tbsp) mango chutney
salt and freshly ground pepper

method

1. Fry the onion in butter in a large pan until soft.

2. Stir in the curry powder and cook for another 2 minutes.

3. Add the rest of the vegetables, the chicken and milk.

4. Simmer for 30 minutes. Stir in the mango chutney and season to taste.

5. Serve hot with a side dish of yogurt mixed with chopped cucumber.
