method
1. Make up the orange juice to 750 ml with water, if required.
2. Put the rind, liquid, sugar, and gelatine into a saucepan and heat gently until the sugar and gelatine have dissolved.
3. Leave to cool.
4. Beat the eggs until liquid and add to the pan.
5. Cook again for a few minutes to thicken, stirring all the time, but do not allow to boil.
6. Strain into a wetted mould and leave for about 2 hours to set.
