pared rind and juice of 2 lemons
175 ml water
2 tsp gelatine
4 tsp caster sugar (superfine granulated)
method
1. Put the lemon rind into a saucepan with half the water and simmer for 5 minutes. Cool.
2. Soften the gelatine in the remaining water in a small heatproof container.
3. Stand the container in a pan of hot water and stir until the gelatine has dissolved.
4. Add the lemon juice and sugar.
5. Pour into individual wetted moulds and leave for about 1 hour to set.
