ingredients

yields 10 lb
6 lb raspberries
6 lb sugar

method

1. Put the cleaned fruit in the pan without any water, and heat gently until the fruit begins to break up and the juices run.

2. Simmer until reduced by a third, stir in the sugar.

3. Bring to the boil and boil rapidly until setting point is reached.

4. Remove from the heat, skim, pot, cover, and label.
