Fresh Pea Soup

ingredients

serves 4
2 tbsp (30 ml) corn oil
1 small onion, skinned and chopped
1 garlic clove, skinned and crushed
1.1 litres (2 pints) chicken stock
2 lb (900 g) fresh peas, shelled, or 1 lb (450 g) frozen
salt and pepper, to taste
low-fat natural yogurt, to garnish

method

1. Heat the oil in a saucepan. Add the onion and garlic and cook for 5 minutes, until softened.

2. Add the stock and peas and bring to the boil, then simmer for 20 - 25 minutes, until the peas are very tender.

3. Cool slightly.

4. Puree in a blender or food processor, until smooth.

5. Return to the pan and add seasoning.

6. Reheat and serve hot, garnished with a swirl of yogurt.
