3/4 stick (6 Tbsp) 75 g butter
1 lb (450 g) courgette (zucchini)s, trimmed and cut into diagonal slices
salt and freshly ground pepper
lemon juice
chopped fresh parsley to garnish
method
1. Heat the butter in a large pan and when hot add the courgettes. Cook over a high heat until well browned, moving them round in the pan. Reduce heat and cook for a further 2 minutes. It is best if they retain a little crispness.
2. Transfer to a warmed serving dish, season well, sprinkle with lemon juice and parsley. Serve immediately.
