1. Peel the potatoes, cover with cold salted water and bring to the boil. Simmer for 8 - 10 minutes. Drain, cut into 0.5 - 1 cm (1/4 - 1/2 inch) slices and score the surfaces of each piece by running a sharp-pronged fork in both directions across the surface.
2. Heat the oil and butter in a large roasting tin, about 30.5 x 23 cm (1 2 x 9 inches) and add the potato slices. Turn over in the hot oil and butter and season.
3. Bake in the oven at 200°C (400°F) mark 6 for about 1 1/4 hours, turning once. Drain and place in a shallow serving dish to serve
