8 slices of white bread, about 2.5 cm (1/2 inch) thick
1 1/4 cup (1/2 pint) 300 ml milk
1/3 cup (75 g) 3oz castor sugar
2 tbsp (30 ml) sweet sherry
2 egg yolks
1 stick (8 Tbsp) 115 g (4 oz) butter
1/2 level tsp (2.5 ml) ground cinnamon
method
1. Remove the crusts from the bread and cut each slice into two triangles.
2. Pour half the milk into a shallow dish and add 25 g (1 oz) caster sugar and the sherry. Stir well together.
3. Dip the bread into the sherry mixture until each slice has been soaked completely then drain on a wire rack.
4. Beat the egg yolks and remaining milk together and dip the bread in this mixture.
5. Heat the butter in a large pan and fry the bread slices until golden. Place on a warmed serving dish. Mix the remaining caster sugar with the cinnamon and sprinkle over the dish. Delicious served with chilled whipped fresh cream.
