2 large Spanish onions, thinly sliced

method
1. Place the onion, pepper and chilli in a serving dish.
2. Mix together the oil, lemon juice, mustard, coriander and salt and pepper to taste and pour over the salad.
3. Cover and chill in the refrigerator for 1 hour.
4. Sprinkle with parsley and serve.
