method
1. Put 4 tbls of fruit juice into a heatproof basin and sprinkle in the gelatine.
2. When the gelatine has softened, stand the basin in a pan of hot water, and stir until completely dissolved.
3. Add the rest of the juice and put a little into each of 4 stemmed glasses.
4. Chill the rest for about 1 hour and when it is on the point of setting, whisk in the buttermilk until frothy.
5. Spoon into the glasses and chill.
Note This is a very good dessert for slimmers.
If using fresh pineapple juice, it must be boiled for 2-3 minutes first as it contains an enzyme which destroys the setting power of gelatine
