4 medium potatoes, peeled, cooked, cubed and kept warm
1 tbsp olive oil
2 tbsp wine vinegar
1/2 tsp salt
Good grinding black pepper
1/2 tsp oregano
1/2 tsp marjoram
1/2 tsp thyme
6 large spring onions, finely diced for garnish
method
1. Place the cooked and cubed potatoes into a large salad bowl.
2. Mix together the olive oil, wine vinegar, seasoning and herbs and pour over the warm potatoes.
3. Stir carefully to coat the potatoes and leave to cool.
4. When cold, garnish with the spring onions.

It wasn't a good choice for a potato salad. although I had tried to make it into a mashed potato, which turned out terrific.
thanx for the having this recipe up, or else i wouldn't of had an incredible dinner.
