Quick and easy to make, this soup is unusual in that it is uncooked - a boon to busy cooks on hot summer days. Do not leave it for longer than 1 hour after mixing because the avocados will cause it to discolour.
ingredients
4 ripe avocado pears
juice of 1 lemon
2 cups (500 ml) consomme or canned consomme
250 ml soured cream
salt and pepper
for the garnish
chopped chives or green part of spring onions
method
1. Scoop out the flesh from the avocado pears, and mix with the lemon juice.
2. Rub through a sieve.
3. Mix the avocado, consomme, and soured cream until blended, and season to taste.
4. Chill in a refrigerator for 2-3 hours.
5. Just before serving, add the chives or spring onions.
