1/3 cup (75 g) butter
4 tbsp (60 ml) Sauternes or any other sweet white wine
4 tbsp (60 ml) stock or water
1 1/3 cup (100 g) mushrooms, sliced
2 oz (50 g) cooked ham, chopped
4 fillet steaks, 175 - 225 g (6 - 8 oz) each
method
1. Melt 25 g (1 oz) of the butter and add the wine and stock or water.
2. Add the mushrooms and ham and simmer gently for 8-10 minutes.
3. Meanwhile fry the steaks in the remaining butter, turning them once and cooking for 3 - 7 minutes on each side, according to taste.
