Baked Lemon Sole

ingredients

1 - 1/2 lbs. fish fillets (sole, flounder)
2 tbsp fresh parsley, chopped
1 lemon (6 wedges)
1 tbsp oil
Salt and fresh ground pepper to taste
1 tbsp lemon juice

method

1. In bottom of shallow baking or broiling pan, spread oil,lemon juice, and pepper.

2. Swish fish around in pan, coating both sides. Sprinkle with parsley.

3. Broil 3 - 4 minutes on each side or until edges are browned.

4. Serve with lemon wedges and sprinkle with salt or additional lemon and pepper.

I didn't add the parsley, just panfried it. Simple, but oh so effective.

Enjoyed it very much - extremely simple and delicious. Just wondering why it's caled Baked Lemon Sole, since the recipe directs that it be broiled - ?

I loved it, so simple to do. Broiled means "baked" at high temp., quickly.

Couldn't beleive the recipe i have been using all these years was actually online. It is such a simple recipe and mmm good.

Some indication of temperature would have been useful and being a Brit, broil is a bit of a mystery does it mean grill or bake or what?

Ep and GAC - there should be a "Broil" setting on your oven. If not 500 degrees on top elememt only.

Olive or vegetablesunflower? Flat or curly parsley?
Makes the world of difference and want to get it right first time, it sounds pretty good.
Always go with good olive oil!

The darker the better. most "italian" olive oil is watered down with olive oil from africa. true virgin italian olive oil will be dark green and incredibly pungent and oh so delicious that you'll want to just eat a raw tablespoon or have it raw with food or vegetables. my favorite dish in italy was roasted popcorn with fresh e.v. olive oil, fresh ground pepper and other herbs and a pinch of hard ground cheese.
