1. Put the whole leeks into a saucepan of boiling salted water and boil gently for 20 minutes, until soft. Drain and keep warm.
2. Meanwhile, melt about three-quarters of the butter in a pan, stir in the flour and cook gently for 1 minute, stirring. Remove the pan from the heat and gradually stir in the milk. Bring to the boil and continue to cook, stirring, for about 5 minutes, then add 75 g (3 oz) cheese and seasoning to taste.
3. Wrap each leek in a slice of ham or bacon, place in an ovenproof dish and coat with sauce. Top with breadcrumbs and the remaining cheese. Dot with the remaining butter and brown under the grill.
