1. Butter and line an 18 cm (7 inch) square cake tin.
2. Put the molasses, milk, lemon juice, lard and ginger in a saucepan and stir until melted. Remove from the heat and beat for 10 minutes.
3. Dissolve the soda in a little boiling water and mix it in. Add the flour, gradually making a stiff batter.
4. Pour the mixture into the prepared tin. Bake in the oven at 180°C (350°F) mark 4 for about 1 hour, until lightly browned, covering loosely with foil if the top gets too brown.
