Lemon Rice Pudding

ingredients

serves 6
3 oz (75 g) short-grain rice
3 oz (75 g) caster sugar (superfine granulated)
grated rind of 1 lemon
2 pt (1.2 L) full-cream milk
1/2 stick (4 Tbsp) 2 oz (50 g) butter

method

1. Preheat the oven to 330°F (180°C) Gas Mk 4.

2. Place the rice, sugar and lemon rind in a well-buttered ovenproof dish and pour over the milk.

3. Bake for 1 hour, stirring occasionally.

4. Decrease the temperature to 325°F (170°C) Gas Mk 3 and bake for 3/4 - 1 hour.

5. Dot with butter to serve.
