Spinach and Prawn Quiche

ingredients

1 1/3 cup (200 g) 7 oz plain wholemeal flour (whole grain)
salt and freshly ground pepper
1 stick (8 Tbsp)4 oz (100 g) butter
1 egg, beaten
2/3 cup (150 ml) 1/4 pt milk
125 g (4 oz) peeled prawns
155 g (5 1/2 oz) packet frozen chopped spinach, thawed

method

1. In a mixing bowl mix together the flour and pinch of salt, rub in the butter and stir in enough cold water to bind together.

2. Roll out the pastry and use to line a 20.5 cm (8 inch) flan ring placed on a baking sheet. Bake blind in the oven at 200°C (400f) mark 6 for 20 minutes until set.

3. To the egg, add the milk, prawns and drained spinach. Season well and pour into the flan case.

4. Bake in the oven at 180°C (350"F) mark 4 for about 40 minutes, until just set. Serve hot.
