1. Cut the chicken into large cubes and place in a bowl with the sherry and a little pepper. Toss together.
2. Thread the chicken and mango cubes and bay leaves alternatively on to long skewers, then brush lightly with oil.
3. Preheat the grill to moderately hot and grill the skewers for 8 - 10 minutes, turning once, until golden on both sides.
4. Sprinkle with shredded almonds or coconut and grill for a further 30 seconds.
