Plain Fruit Cake

ingredients

serves 8
5 oz (150 g) soft margarine
2/3 cup (5 oz) 150 g caster sugar (superfine granulated)
2 eggs
10 oz (300 g) mixed dried fruit
2 1/4 cups (8 oz) 225 g self raising (self rising) flour
1 tsp Mixed Spice (All Spice / Pumpkin pie spice)
4 fl oz (125 ml) milk

method

1. Preheat the oven to 300°F (150°C) gas mark 2.

2. Put all the ingredients in a bowl and mix thoroughly to a soft dropping consistency.

3. Put the mixture into a 7 inch (17.5 cm) lightly oiled round cake tin which has been lined with greased greaseproof paper.

4. Bake in the oven for 2 hours until firm.

5. Transfer to a wire rack to cool.

Very good but you don't need quite so much spice.
