method
1. Heat the oven to 375°F (190°C) gas mark 5.
2. Put the butter and lemon zest into a bowl and mix together.
3. With a sharp knife, make three deep cuts in each chicken breast and spread the butter into the cuts.
4. Place chicken in a shallow ovenproof dish so they just touch. Sprinkle with lemon juice and seasoning.
5. Cook in the oven for about 20 - 25 minutes, until tender.
6. Lift on to a warm serving dish. Add 1 tablespoon water to the cooking dish and stir round, scraping the bottom of the dish to dislodge any bits on the dish.
7. Return the dish to the oven for 1 - 2 minutes to heat through.
8. Stir the soured cream into the cooking dish and again heat through in the oven for a few minutes.
9. Pour sauce over the chicken and serve.
