Yam Crisps

ingredients

2 (8 oz) yams
Oil for deep frying

method

1. Peel yams; cut in half lengthwise. Slice halves in thin semicircles, about 1/8 inch thick.

2. Heat 1/2 inch oil in deep heavy skillet over medium high heat.

3. Fry yam slices until crisp, about 2 to 3 minutes, turning over once, Drain on paper towels.

4. Fry in small batches.
