method
1. Wash the apples but do not peel them.
2. Remove the stalks and the cores.
3. Place in a saucepan with enough water to just cover them and add the sugar, sherry, lemon rind and juice, vanilla pod and cinnamon stick.
4. Cook over a low heat until the apples begin to go soft.
5. Remove the apples from the pan and place on a serving dish.
6. Boil the cooking, liquid over a high heat until it has reduced and become syrupy, then strain the liquid over the apples.
7. Dust with sifted icing sugar.
