method
1. Using a sharp knife, cut the dates lengthwise and remove the stones leaving the dates intact.
2. Put the chocolate, vanilla essence and boiling water in a small saucepan and stir well over low heat until the chocolate has melted.
3. Remove and place the saucepan in a larger saucepan full of boiling water so that the chocolate does not harden too quickly.
4. Gently press open the dates, spoon in some melted chocolate and press the sides of the dates back together.
5. Arrange in sweet papers.
