Ginger Shortbread

ingredients

makes 16-20
1 cup (225 g) butter, cut into small pieces
1 1/3 cup (250 g) light brown sugar
4 cups (1 lb) 450 g plain flour, sifted
4 tsp ground ginger
3 oz (75 g) chopped mixed peel

method

1. Preheat the oven to 300°F (150°C) gas mark 2.

2. Cream together the butter and sugar.

3. Add the flour, ginger and peel and mix thoroughly.

4. Put the mixture into a greased large Swiss roll tin and bake in the oven for 30 minutes.

5. Leave in the tin to cool, then cut.into squares.
