Strawberry Cream Punch

ingredients

serves 4-6
14 oz (400 g) can pineapple juice, chilled
1 3/4 pt (1 litre) bottle lemonade, chilled
1/3 cup (65 g) caster sugar (superfine granulated)
4 cups (32 fl oz) 900 ml strawberry ice cream
4 cups (32 fl oz) 900 ml ginger ale, chilled
few fresh strawberries

method

1. In punch bowl mix the pineapple juice, lemonade and sugar and stir well until the sugar has dissolved.

2. Add the ice cream and stir again until blended.

3. Stir in the ginger ale and float halved strawberries on top to serve.
