Peach Honey Cream

ingredients

serves 6
12 oz (350 g) fresh peaches, skinned, stoned (seeded) and crushed
6 oz (175 g) clear honey
1 3/4 pt (1 litre) milk
1/2 tsp almond essence
1 3/4 pt (1 litre) vanilla ice cream

method

1. Place the peaches and honey in a bowl and mix well.

2. Stir in half the quantity of milk, beat well, then add the remaining milk.

3. Stir in the almond essence and half the quantity of ice cream.

4. Beat thoroughly until smooth.

5. Pour into individual glasses and place a small scoop of the remaining ice cream on top.
