Potato Ratatouille

ingredients

serves 4
4 tbsp olive oil
2 large onions, sliced
2 garlic cloves, crushed
12 oz (350 g) potatoes, cubed
4 oz (110 g) courgette (zucchini)s, sliced
3 large tomatoes, peeled
2 green peppers, deseeded and sliced
pinch oregano
salt and freshly ground black pepper
1 tbsp finely chopped fresh parsley

method

1. Heat the oil in a deep frying pan.

2. Cook the onions and garlic gently until the onions are transparent.

3. Add the potatoes, courgettes, tomatoes, peppers and oregano and season with salt and pepper.

4. Cover and simmer gently for 20 minutes or until the potatoes are cooked.

5. If the ratatouille is too dry, add a little water.

6. Stir in the parsley just before serving.
