Red Cabbage and Potato Gratin

ingredients

serves 4
2 lb (900 g) potatoes, peeled, boiled and halved
1 tbsp (1/2 oz) butter
2 oz (50 g) streaky bacon, derinded and chopped
1 small onion, chopped
12 oz (350 g) red cabbage, shredded
salt
1/2 tsp curry powder
pinch cayenne pepper
pinch paprika

method

1. Place the potatoes in a greased ovenproof dish.

2. Melt the butter in a frying pan, add the bacon and onion and cook until the bacon is crisp.

3. Remove about one-third of the mixture and set aside.

4. Stir the cabbage into the pan with salt with taste, then add the curry powder, cayenne and paprika.

5. Stir thoroughly and cook for 2-3 minutes.

6. Pour over the potatoes and sprinkle the reserved bacon and onion mixture on top.

7. Cook under a preheated grill until the top is golden brown and serve immediately.
