1. Beat eggs and Parmesan cheese together in a large bowl.
2. Melt half the butter in a 17.5 cm (7 in) omelette pan and pour in half the egg mixture.
3. Cut the avocado in half. Slice one half thinly into long fingers.
4. Mash the other half with the sour cream and salt and pepper and nutmeg; stir in the camembert.
5. Arrange half the avocado fingers in a fan shape on top of the omelette and top with half the camembert mixture.
6. Put under a hot grill/broiler for 1 minute until the cheese melts, then fold the omelette in half and tip onto a warmed plate.
7. Garnish with sprigs of parsley and Parmesan cheese and serve at once. Make the remaining omelette in the same way.
