1. Preheat the oven to 400°F (200°C) Gas Mk 6. Melt the butter in a large saucepan.
2. Toss the potato slices in the butter until well coated.
3. Sprinkle with salt and pepper to taste.
4. Place the tomatoes into boiling water for 1 minute, then immediately dip into cold water and remove the skins.
5. Grate the onion into a bowl, add the tomatoes and mix well.
6. Season with more salt and pepper.
7. Place layers of the potato and the tomato and onion mixture in an ovenproof dish, finishing with a layer of potatoes on top.
8. Sprinkle over the breadcrumbs and pour any remaining butter from the saucepan over the top.
9. Bake in the oven for about 1 1/4 hours or until the potatoes are tender and the top is golden brown and crisp.
