2 tbsp (1 oz) 25 g butter
12 oz (350 g) can sweetcorn, drained
1/2 chilli pepper, deseeded and sliced
1 red pepper, deseeded and chopped
2 garlic cloves, crushed
3 tsp lemon juice
1. Heat half the butter in a frying pan. Add the drained sweetcorn together with the chilli, red pepper and garlic.
2. Mix together well and cook over low heat for 4-5 minutes.
3. Pour in the lemon juice with salt to taste and the remaining butter.
4. Stir the mixture well and serve immediately on a warm dish.
