4 chicken breasts, skinned and cooked
1 large ripe avocado
1 small garlic clove, crushed
2 tbsp lemon juice
1 tbsp oil salt and freshly ground black pepper
method
1. Cut the chicken breasts into thick slices and arrange on a serving plate.
2. Liquidise the avocado, garlic, lemon juice, oil and seasoning together until smooth.
3. Spoon over the chicken dividing the sauce equally between the four chicken pieces.
4. Serve with a crisp mixed salad and hot new potatoes.
