Potato and Bacon Savoury

ingredients

serves 4
3 spring onions, chopped
3 eggs
1 1/4 cup (1/2 pint) 300 ml milk
1/2 tsp dried sage
salt and freshly ground black pepper
1 1/2 lb (675 g) mashed potatoes
8 oz (225 g) bacon, diced
grated cheese

method

1. Fry the onion until crisp.

2. Place the eggs in a bowl and beat well, adding the milk, sage and onion.

3. Season well with salt and pepper to taste.

4. Grease an ovenproof dish and arrange the mashed potato around the edge.

5. Use a fork to fluff up the potatoes.

6. Place the bacon in the middle and pour the egg mixture over the top of the bacon.

7. Sprinkle over some cheese.

8. Bake in the oven for 30 minutes until the egg has set and the potatoes are golden brown.
