method
1. Put the peas and spring onions in a heavy based saucepan.
2. Add half the butter, the sugar and salt and pepper to taste.
3. Add the water and bring to the boil.
4. Lower the heat, cover and simmer gently for 10 minutes.
5. Remove and discard the outer leaves of the lettuce.
6. Cut the lettuce heart into quarters and add to the peas and onions.
7. Cover and simmer for 3-5 minutes, shaking the saucepan from time to time.
8. Remove from the heat, add the remaining butter and toss thoroughly.
9. Place in a warm dish and serve immediately.
