Cabbage and Bacon

ingredients

serves 4
1 small white cabbage
1 tbsp sunflower oil
4 oz (110 g) bacon pieces, roughly chopped

method

1. Finely shred the cabbage removing the outer leaves.

2. Heat the oil in a large saucepan, and fry the bacon until the fat runs out.

3. Increase the heat and fry until the bacon is crisp.

4. Stir in the cabbage and cook over high heat for 5 minutes, continuously tossing the cabbage.

5. Serve immediately.

Looking for a new recipe I tried this one and was amazed when my 3 children eat the whole lot... Fantastic!

We have loads of cabbage grown on the allotment and I needed a quick simple recipe to try and make it more interesting - there is only a limited amout of boiled cabbage, coleslaw and soup I can take. This is a great improvement and doesn't take long.
