Chicken Maryland

ingredients

serves 4
1 young chicken, jointed; or 4 chicken joints seasoned flour
beaten egg
fresh white breadcrumbs
1/3 cup (75 g) butter
1 tbsp oil
4 streaky bacon rashers
2 bananas, peeled and sliced lengthways
corn fritters

for the corn fritters

2 eggs, separated
6 oz (175 g) sweetcorn
salt
pinch sugar
1 tsp baking powder
4 oz (110 g) fresh breadcrumbs
oil for frying

method

1. Skin the chicken. Roll in seasoned flour, brush with beaten egg and roll in breadcrumbs until well coated. Put in the refrigerator for 15 minutes.

2. Heat the butter and oil in a large frying pan and saute the chicken pieces until evenly browned and well cooked through. Keep hot.

3. Grill the bacon rashers and roll up.

4. Brown banana slices in the frying pan.

5. Arrange the chicken on a heated serving dish together with the bacon rolls and fried bananas.

6. Serve with Corn Fritters.

to make corn fritters (makes 4-6)

1. Beat the egg yolks well, add to the sweetcorn and season with salt and sugar.

2. Whisk the egg whites stiffly and fold in.

3. Add the baking powder and enough breadcrumbs to make the mixture stiff enough to handle.

4. Form into little cakes. Heat some oil in a frying pan and fry the cakes gently until brown on both sides.
