Peperonata #3

ingredients

serves 4
2 tbsp olive oil
1 onion, chopped
4 red peppers, deseeded and sliced
6 tomatoes, peeled and chopped
1 tsp sugar
salt and freshly ground black pepper
1 tbsp chopped fresh parsley

method

1. Heat the olive oil in a frying pan and saute the onion until transparent.

2. Add the peppers, cover and cook over a low heat for 15 minutes.

3. Stir in the tomatoes, sugar, salt and pepper, then cover and cook for a further 15 minutes.

4. Sprinkle with parsley and serve.
