Broad Bean Puree

ingredients

serves 4
5 lb (2.3 kg) broad bean (fava bean)s, in the pods
1/3 cup (75 g) butter
salt and freshly ground black pepper pinch nutmeg

method

1. Shell the beans.

2. Cook in boiling water for about 10 minutes or until very tender.

3. Drain, reserving the cooking water.

4. Puree with a little of the cooking water.

5. Return to the heat and stir in the butter and seasoning.

6. Cook over a very low heat, stirring constantly, for 5 minutes or until piping hot.
