method
1. Preheat the oven to 350°F (180°C) Gas Mk 4.
2. Gently simmer the cooking apples with a little butter and water until mushy.
3. Strain off any extra juice leaving a firm puree.
4. Mix in the tomato puree, oats, salt and sugar and cook for 1 minute.
5. Put the fish into a buttered shallow ovenproof dish and cover with the apple mixture.
6. Bake in a preheated oven for 30 - 40 minutes.
7. Garnish with lemon.
