1. Peel the grapefruit, divide them into segments and chop each segment into 3 or 4 pieces, depending on their size.
2. Chop the tomatoes into equal sized pieces and put them into a bowl with the grapefruit.
3. Mix the mayonnaise with the tomato paste and Tabasco sauce and fold the resulting dressing into the tomatoes and grapefruit.
4. Arrange a bed of lettuce on 4 small plates and pile the salad on top.
5. Scatter the parsley over the salad.
