Honey Carrots

ingredients

serves 4
1 lb (450 g) young carrots, sliced
2 tbsp (1 oz) 25 g butter
1 tbsp runny honey
chopped fresh parsley

method

1. Place the carrots in boiling salted water and cook for 10 minutes,until just tender. Drain thoroughly.

2. Place the butter and honey in a saucepan, heat and then add the carrots.

3. Cook for a few minutes, stirring until all the carrot slices are coated with the honey.

4. Turn onto a warm serving dish and sprinkle with parsley.
