method
1. Cook the macaroni in 2 pt (1.2 L) of boiling salted water until tender.
2. In the meantime, place the fish in a little salted milk and simmer over a low heat until tender.
3. Remove the fish, retaining the milk and break the fish into large flakes.
To make the sauce
1. Heat the butter in a small pan until melted. Carefully stir in the flour for 2-3 minutes.
2. Remove from the heat and gradually pour in the milk and fish liquor and season to taste, stirring constantly.
3. Return to the heat and bring to the boil. Boil until the sauce has thickened.
4. Lower the heat and stir in three-quarters of the grated cheese.
5. Arrange the fish and macaroni in a warmed serving dish and pour the cheese sauce over the top.
6. Sprinkle the remaining cheese on top. Place under a hot grill for 3 minutes until the top is golden brown.
