2 large carrots, cut into long thin strips
2 large parsnips, cut into long thin strips
1/2 stick (2 oz) 50 g butter, diced
2 tbsp vegetable oil
2 tbls (25 g) sugar
method
1. Preheat the oven to 200°C (400°F) Gas 6. Place the carrots and parsnips in an ovenproof dish and add the vegetable oil.
2. Sprinkle half of the sugar over Bake in the oven for 45 minutes.
3. Remove half way through and sprinkle on the remaining sugar. The sugar makes the edges go crispy and makes the vegetables taste sweet.
4. Dot with butter and serve straight away.
